Kale-Not as bad as it sounds

This year I have resolved to try and help my family eat better. I have been reading a lot about good super fruits and veggies to eat and came across kale. Kale is high in a number of categories including: beta carotene, vitamins K&C and calcium. It is also suppose to be good for cancer prevention and heart health. I thought it would be worth a try.

As I am not the best chef in all the world, I ordered cheddar flavored kale chips online. Today the kale chips that I ordered arrived. As you can see from the picture above they look more like kale crumbs. (I contacted the company that sent these to me. I requested either they send another box that actually looks like chips or they send me a refund.)

I have to say they weren't that awful. The pieces that actually stayed pieces were the consistency of a chip. They tasted like spinach with an awesome spicy cheddar cheese seasoning. This won't be something I will eat daily but I will definitely try to get into my diet more often. I highly encourage each of you to try kale soon if you have never had it.

  2. Great blog Jennifer! I'm excited to add it on my daily list:) The Kale chips actually do sound pretty good. Everything is better with cheddar cheese.
